About: Proud Mary’s connection to the Santa Barbara region of Honduras began in 2012, when we were introduced to a small group of producers based around the town of Peña Blanca, near the shores of Lake Yojoa. More than a decade later, that group has grown, and our relationships have deepened. Nahun was one of the first producers we started working with. At the time, he grew traditional varieties and processed coffee exclusively using the washed method.
Today, Nahun is a processing specialist and a leader in his community, openly sharing the techniques he has learnt. Through his commitment to both quality and collaboration, the standard of coffee produced in the Las Flores community has steadily improved. Alongside this, Nahun has continued to refine his own work, placing multiple times in the Honduras Cup of Excellence with his Parainema. Most recently, he placed third in the 2025 competition. His honey process first appeared on the COE stage in 2018, earning 13th place.
We were fans of Nahun’s Honey Parainema long before his competition success, and remain so. This year’s harvest delivers notes of juicy apricot and citrus.

Processed using the honey method, where fruit mucilage remains in contact with the bean during drying, this approach typically imparts sweetness and body while allowing varietal character to emerge. The roaster identifies juicy apricot and citrus notes, suggesting the honey process has amplified the natural fruit-forward potential of Parainema. At 1500–1550 meters above sea level, the elevation supports complexity in both acidity and sweetness.
