This coffee comes from the Koke district of Yirgacheffe, where smallholder farmers carefully cultivate and harvest ripe coffee cherries by hand. The cherries are delivered daily to the Yirgacheffe Koke washing station, partly owned by Abreham Mengiste and operated alongside Primrose S.P. PLC, who oversee the milling and export process.

Each lot is meticulously sorted by quality, producer, and harvest date before undergoing a traditional washed process. After pulping, the coffee ferments for 48–72 hours to remove mucilage, then dries slowly under the Ethiopian sun on raised beds. Great care is taken throughout every stage to remove underripe or damaged cherries, preserving the coffee’s clarity and sweetness.

The result is a vibrant and expressive cup with clean structure, layered sweetness, and the distinctive floral elegance that has made Yirgacheffe coffees celebrated around the world.

Context

This Ethiopia Koke Shalaye from PPP Coffee originates in Yirgacheffe's renowned Gedeo zone, processed at the Yirgacheffe Koke washing station under producer Abreham Mengiste of Primrose S.P. PLC. The lot combines local landraces with JARC 74 selections, a varietal blend common to the region's terroir-driven approach.

Fully washed processing typically yields brighter acidity and cleaner expression, which aligns with the tasting profile of blackberries, plum, toffee, and white peach—layered stone and dark fruits characteristic of well-executed Ethiopian naturals at this elevation. The milk tea and floral notes suggest the delicate complexity Yirgacheffe is prized for. Learn more about washing methods and how to explore these flavor dimensions using the flavor wheel.
