ABOUT

This lot is straight out of Pitalito, Hulia, where Willyan and his wife Maria Esther Lopez produce exquisite coffees on their farm La Montañita. Most of what they grow is Pink Bourbon - a variety native to Colombia, specifically Huila. This release marks the sixth time we have featured this lot during our five year partnership. Starting in 2022, our goal was to establish a long term, mutually beneficial partnership with a producer who shared a similar passion for outstanding coffee. 

Continually, this is one of our most delicious releases. This coffee is a heady mix of fruit, texture and acid. In an ever changing landscape of extended, experimental fermentation, it is fantastic to have a coffee representing the other side of the spectrum. This coffee is one that is grown with the upmost care and attention, processed with minimal intervention, allowing the inherent flavours to shine through.

Grown at 1,750 masl, the coffee displays the candy floss sweetness and stone fruit profile that Seven Seeds has highlighted in their roasting—peach and cherries creating a balanced, approachable cup. The fully washed processing method supports these clean, bright fruit notes, allowing the varietal's inherent complexity to shine without the heavier body that natural fermentation might introduce.
