From the roaster

This is our first year working with the Chorso Bule site, which rests at some of the highest elevations in all of Gedeb. In the cup we find peach tea, melon, and jasmine.

Sey Coffee

Context

Sey Coffee is known for sourcing coffees that highlight terroir-driven clarity, and Gedeb — nested within Ethiopia's celebrated southern highlands — is a region long associated with some of the country's most expressive cup profiles. Ethiopian coffees broadly, and Gedeb lots in particular, are frequently characterized by their delicate florality and stone-fruit brightness, qualities that make them recurring benchmarks for exploring the aromatic upper registers of the flavor wheel.

The Chorso Bule lot arrives from a named producer, a detail that signals intentional traceability — an increasingly valued marker of quality sourcing in specialty coffee. Floral and fruit-forward descriptors like jasmine and peach tea are commonly associated with high-quality Ethiopian offerings, where indigenous heirloom genetics tend to lend a distinctive aromatic complexity. Whether served hot or as a cold steep, coffees carrying these characteristics often reward slower, more attentive brewing that lets delicate top notes fully develop.
