Context
Sey Coffee offers this lot from producer Boneya Robe, sourced from the Gedeb district of Ethiopia — a region long celebrated for producing coffees of notable clarity and complexity. Gedeb sits within the broader southern Ethiopian highlands, where dense heirloom genetic diversity and high-altitude conditions have made the area a benchmark for specialty buyers worldwide.
Understanding where this coffee lands on the flavor wheel helps frame the roaster's notes of ripe peach, watermelon, and sweet tea: these bright, fruit-forward and delicate descriptors are characteristic of the profiles that have made Ethiopian Gedeb coffees so sought after. The sweet tea quality in particular reflects a lightness of body and clean, lingering finish that distinguishes finely sorted Ethiopian lots. Taken together, these notes suggest a coffee oriented toward elegance and juicy sweetness rather than roast-driven weight.
