Wilmer Galindez is a member of the Monkaaba group (see Lucrecia Hoyos, Jose Burbano, the Ortegas etc) centered around San Agustin, Huila. He farms land adjacent to his family's plot and has worked incredibly hard to renovate both farms: clearing, prepping, planting, and cultivating Tabi, Pink Bourbon and San Bernardo. This is our first year buying from Wilmer and third harvest from Monkaaba members.  The coffees from this region are our favorite - often pink bourbon, which we have featured regularly. Wilmer's small lot of 100% Tabi is tasting very sweet and clear. Sugarcane juicy, creamy (flan) and apricot bodied.

Grown at 1800–1950 masl, this Tabi varietal—a relatively uncommon choice in Colombia—yields roaster Bows & Arrows Coffee a compelling profile of flan, apricot, and sugarcane. The combination of custard sweetness with stone fruit suggests the altitude and processing have preserved delicate aromatics while developing caramelized body. Tabi's genetics tend toward complexity; here, the producer's care at origin pairs with thoughtful roasting to deliver approachable yet nuanced flavor.
