Carlos Ramos' coffees have been on our menu since 2011. Always clean and well processed, always sweet. His harvest volume has grown markedly in that time from less than ten bags exportable green to over 70 this year. This is a testament to the program instituted by Benjamin Paz and crew at Beneficio San Vicente.

Carlos works very hard to replicate consistently good coffees year in year out. We're pleased to feature this lot of pacas at filter for now.

Bows & Arrows Coffee

Context

From Bows & Arrows Coffee, this espresso showcases the Pacas varietal grown by Carlos Ramos in El Cielito, Santa Bárbara, Honduras. The roaster identifies snickerdoodle, marzipan, and maple candies in the cup—a sweet, nutty profile that leans toward confectionery notes. Pacas, a compact bourbon descendant, tends to produce balanced, approachable coffees, and this expression emphasizes that character through its candy-like sweetness and warm spice undertones. The combination of varietal expression and roast approach creates a straightforward, dessert-like drinking experience suited to espresso preparation.
