FROM THE HIGHLANDS OF GUJI: A NATURAL PROCESS DECAF WITH SWEETNESS AND FLORAL DEPTH

Ethiopia is the birthplace of coffee, and decaffeinated offerings from this origin are always something special and rare to come by. This lot is a testament to careful sourcing and thoughtful production throughout the supply chain.

The coffee comes from Benti Nenka village in Hambela, part of the Guji zone in southern Ethiopia. Farms here are typically small garden plots, often less than two hectares, where coffee grows among shade trees and food crops like false banana. The high elevation and steady climate slow the maturation of the cherries, contributing to the clarity and layered sweetness Guji coffees are known for.

This coffee is processed at Eyasu Worasa’s Guduba mill, which he has been leading with experience and care for over a decade. This lot is natural processed, allowing the fruit to dry intact around the seed. The result is a decaffeinated coffee with berry sweetness, hints of stone fruit, soft florals, and a tea-like finish. It’s a reminder that decaf doesn’t have to mean compromise.

12 oz / 340 g. Whole bean.

Ruby Coffee Roasters

Context

This decaf offering from Ruby Coffee Roasters brings Ethiopian fruit character to the decaffeinated category. Sourced from the Guji region's Hambela area and processed naturally by producer Eyasu Worasa at the Guduba mill, the lot displays the stone fruit and citrus profiles typical of natural-processed coffees—apricot and mango complemented by honey sweetness and orange zest. Natural processing, where beans dry inside the fruit, tends to emphasize fruit-forward aromatics; this lot demonstrates how that method can work effectively in decaf applications. The combination of origin, processing choice, and roaster execution suggests a coffee designed to maintain complexity and sensory interest despite caffeine removal.
