Welcome to Colombia season

Jesus Ramos built this 2.5 hectare farm rooted in the belief that specialty coffee could become a sustainable long term livelihood and a promising future for his family. Jesus grew up in the city working in restaurants, before building this coffee project in La Florida high in the mountains.

Process: For this castillo varietal lot, only the ripest cherries were hand picked, then depulped and traditionally fermented for 12hrs. The coffee seeds then undergo drying phase for 10-15 days on the farm's patios.

Context

Kuma Coffee's Colombia Villa Catalina originates from La Florida in Narino, where producer Jesus Aurelio Ramos cultivates Castillo at 1900 masl. The washed process yields a profile centered on stone fruit brightness—dried mango and tangerine—balanced by subtle nuttiness. Castillo, a hybrid variety developed for disease resistance, often produces accessible, fruit-forward cups; this lot expresses that character through clean, dried-fruit notes rather than fresh citrus intensity. The combination of altitude, varietal selection, and careful fermentation suggests a coffee built for clarity and approachability. For context on regional characteristics, Colombia · La Florida, Narino sits within a historically significant coffee zone known for consistent quality.
