From the roaster

This is a limited, experimental micro-lot from our longtime friend and collaborator Moises Hidardo Hernandez in Mercedes, Ocotepeque, Honduras. If you’ve been with us for a few years, you may remember a special fermentation trial we ran together. Barolo is a honey-processed coffee inoculated with Barolo wine yeast for a wild, rich, spiced result.

The cup?Silky and smooth with notes of clove, milk chocolate, and nougat. It’s like sipping a winter dessert by the fire.

Chromatic Coffee

Context

Barolo Aerobic Honey is a honey-processed coffee from Mercedes, Ocotepeque in Honduras, produced by Moises Hidardo Hernandez and roasted by Chromatic Coffee. Honey processing leaves some of the fruit mucilage on the bean during drying, typically contributing body and subtle sweetness to the cup. This lot displays warm spice and chocolate notes—clove, milk chocolate, and nougat—characteristic of the roaster's vision for the coffee. The combination of aerobic fermentation during processing and the Honduras terroir creates a balanced profile that bridges chocolate-forward comfort with the delicate complexity that honey-processed coffees can offer.
