This decaf from April Coffee Roasters showcases Costa Rican coffee's potential even after decaffeination. Producer Alejo Castro's Caturra was processed using the Swiss Water decaffeination method, a chemical-free approach that preserves the bean's inherent flavors. The red honey processing technique adds sweetness and body—the roaster identifies raisins and nougat alongside red fruit notes. At 1500 meters elevation in Costa Rica's Tarrazú region, the beans developed the complexity that survives the decaffeination process. This lot demonstrates how careful sourcing and processing can yield a decaf worthy of specialty coffee standards, making it an excellent choice for those seeking flavor without caffeine.
