From Funk
We don't choose favourites, unless it's cars (does a Vespa count?), mugs, or concert venues.
But we gotta say... this coffee might be the exception.
The expressive aromatics and intense sweetness that producer Beto Narvaez achieves through a masterful anaerobic fermentation phase and thermal shock process are off the charts. Super fruity, zesty acidity, fresh florality. Checks all the boxes.
We've had some next-level coffees this year but this one stands out like a bottle rocket on the beach at midnight. Beto, you're the boss.

Context
This washed coffee from Beto Narvaez in Huila, Colombia represents Revolver Coffee's exploration of processing innovation. The washed thermal shock method—which applies temperature contrasts during fermentation—aims to heighten clarity and complexity in the cup. Pink Bourbon, a naturally occurring mutation within the Bourbon family, is prized for its tendency toward floral and fruit-forward profiles. The roaster identifies purple florals, candied orange, and ripe fruits, suggesting the process has emphasized bright, delicate aromatics alongside juicy sweetness. Such flavor characteristics align with what thermal shock processing often pursues: enhanced definition and pronounced sensory distinction.
