From the roaster

Located in the heart of Ethiopia's Guji region, Shakiso is known for its mining and coffee production. We've initiated the production of a unique all-female-produced coffee sourced from the Shakiso and its surrounding Kebeles. With approximately 30 female producers, this coffee undergoes a special drying prcoess within the fruit, resulting in a balanced cup profile with prominent fruit notes. We've partnered with Sookoo to bring you the product of their hard work, and we publish all prices paid to them, which you can find below.

Context

This natural-processed Ethiopian represents the fruit-forward character typical of natural coffees, where extended skin contact during drying intensifies berry and stone-fruit expression. Sourced from Shakiso in the Guji zone of Ethiopia, the coffee carries the regional profile associated with this high-altitude growing area. Onyx Coffee Lab has highlighted fruit as the dominant tasting note, inviting exploration across the flavor spectrum for the specific expressions—whether citrus, berry, or dried-fruit character emerges in your cup. The Sookoo producer's lot showcases how natural processing amplifies the coffee's inherent sweetness and complexity, making it a compelling choice for those seeking bold, fruit-driven Ethiopian profiles.
