From the roaster

Juan is a second-generation farmer who has been cultivating coffee for over 40 years on his 16-hectare farm, El Porvenir, in Palestina, Huila. His expertise and early investment in the Pink Bourbon cultivar have earned him recognition and awards within the specialty coffee community, so we are excited to continue working alongside Juan to roast this small batch of his Gesha variety.

Onyx Coffee Lab

Context

This Geisha varietal from Juan Jimenez's farm in Palestina, Huila represents a distinctive pairing of Colombia's mountainous coffee terroir with one of specialty coffee's most celebrated varieties. Geisha is prized for its characteristic floral and tea-like clarity, qualities that emerge distinctly in washed-processed lots. The washed process emphasizes the varietal's cleaner flavor expression by removing the fruit mucilage during fermentation. Onyx Coffee Lab brings their roasting perspective to this single-origin lot, capturing the nuanced aromatics this combination can offer. Explore the full sensory profile using the flavor wheel to identify the specific notes present in your cup.
