Finca Deborah's Nirvana is a distinguished Geisha coffee that achieved significant recognition when Australian Barista Jack Simpson utilized it to secure 2nd place in the 2024 World Barista Championship. This coffee is processed through an extended nitrogen macerated natural method, resulting in a cup that is fruit forward and syrupy.

Jamison Savage has long envisioned, and now achieved, delicious encapsulated coffees with excellent extraction and extraordinary flavour.  Savage Coffee has encapsulated Nirvana using aluminum capsules and infused it with nitrogen to maintain a low residual oxygen content – leading to a longer shelf life.

Monogram Coffee

Context

This natural-processed Geisha from Panama represents one of the most sought-after varietal and processing combinations in specialty coffee. Grown at Finca Deborah, the lot's name—Nirvana—reflects the high expectations surrounding Geisha coffees, which are prized for their distinctive floral and tea-like clarity. Monogram Coffee has brought out cherry, blackberry, and mango in their roast, showcasing how natural processing tends to amplify fruit-forward characteristics in the cup. The interplay between this varietal's inherent complexity and the fermentation-driven profile created by the natural method makes this a notable expression from the producer.
