Parlor Coffee

Parlor Coffee was founded in 2012 by Dillon Edwards, who arrived in New York from Portland, Oregon at nineteen and immersed himself in the city's emerging coffee scene. Starting with a single-group espresso machine, Parlor's first location occupied the back of the Persons of Interest barbershop in Williamsburg, where it quickly built a following among baristas, chefs, and restaurateurs. Over time, a close-knit team formed around Dillon, including Tessa, who designed the brand's early packaging, and Warwick, who now oversees roasting on a vintage Probat roaster. Today, Parlor operates from a repurposed carriage house on the edge of the Brooklyn Navy Yard, roasting coffee for wholesale accounts—cafés, restaurants, and hotels—as well as home brewers globally. The company emphasizes transparent relationships with producers throughout the supply chain and maintains a stated commitment to consistency in roasting excellence.
