Roaster's Notes: This lot comes from Sawana Village in the highlands of Shakiso, part of Ethiopia’s renowned Guji Zone, where elevation and climate create ideal conditions for slow cherry maturation and complex cup profiles. Processed at Yemsrach Teshome dry mill, the coffee is carefully sun-dried on raised beds for up to 18 days, allowing sugars to concentrate and fruit character to fully develop. In the cup, expect a vibrant expression of classic Guji natural—layered berry sweetness, soft florals, and a rounded, confection-like finish. The 74110 variety brings structure and clarity, while local heirloom cultivars add depth and aromatic complexity. The result is a balanced and expressive coffee that highlights both its origin and careful processing.

Victrola Coffee Roasters

Context

This natural-processed Ethiopian from Victrola Coffee Roasters sources directly from Yemsrach Teshome in Sawana Village, Shakiso, Guji Zone. Grown at 1800–2150 masl, the Ethiopian Heirloom varietal benefits from the region's altitude and microclimate. Natural processing typically amplifies fruit-forward character, and this lot delivers elderflower and blueberry notes alongside a subtle marzipan sweetness—a profile characteristic of carefully fermented, sun-dried lots from Ethiopia's southern highlands. The combination reflects both the varietal's inherent floral potential and the farmer's attention to selective harvesting and drying practices.
