This coffee comes to us from Patio Bonita, a farm in Caldona, Cauca founded by Don Carlos Trujillo, who’s been producing high quality lots for nearly four decades. His daughter Paola manages the fermenting and processing endeavors. With a background in chemical engineering, Paola returned home to work alongside her parents and quickly became devoted to improving every stage of cultivation and processing. Her family tends a wide collection of varieties including Bourbon Rosado, Gesha, SL28, Typica, Laurina, and one of the most rare and fascinating varieties in the world, Wush Wush. This particular lot is a washed Pink Bourbon that has undergone a thermal shock protocol to kickstart the fermentation process.
Paola is known for her ability to cultivate delicate floral notes in her coffees through innovative processing methods, and this lot is no exception. We taste clear notes of lemonade and Thai basil. The cup is sweet throughout, similar to wildflower honey.
