Roasters' Notes:

As a natural processed coffee, this lot calls for a gentler approach in the roast. The lower density of the beans means we start from a lower charge temperature and use a slower ramp toward first crack. This extended roast allows the internal structure of the beans to develop without overdeveloping the exterior.

Naturals typically have a more brittle cellular structure, which can lead to more fines during grinding. In the cup, this often translates into a fuller, more textured profile and a rounder mouthfeel in the final brew. This lot presents a clean expression of Brazilian natural character, with soft notes of almond, marzipan, and subtle plum sweetness.

This release marks another season we’ve sourced coffee from Sitio Vargem Grande, run by Rosimeire Aparecida Guerra and her husband Carlos. Their small producer-owned farm in Mantiqueira de Minas reflects a long family history in coffee production, with both drawing on generations of knowledge in their work. This includes support from Carlos’ brother Tiago and his mother Lourdes Fatima, another highly regarded specialty producer.

They acquired the farm in 2009 when they got married, choosing a high-altitude site for Brazil, between 1100 - 1400m ASL, to pursue quality-focused production on just 3 hectares of land planted with red and yellow Catuai. Processed as a natural, this lot’s cherries were dried on patios for 5 to 7 days, then finished in a drying box over a 12 day period.
