From the roaster

Sierra de las Minas is one of Guatemala's largest mountain ranges. This coffee is cultivated by a small collection of estate holders in El Progesso on the Las Minas range. After harvest and processing the coffee is handled by Josue Morales at Los Volcanoes Coffee in Antigua.  Greenway has worked with Josue Morales, founder of LVC, for many years.

Josue’s approach to coffee production involves centering the supply chain and educational system around the growing communities of Guatemala. These onsite classes focus on biodynamic farming practices, natural methods of insect and fungal control, as well as extensive farm management systems.

We're tasting black cherry, hazelnut, and caramel.

Context

San Antonio from Guatemala's El Progreso region arrives via Los Volcanoes Coffee as a washed, patio-dried Bourbon. Roasted by Greenway Coffee, this coffee expresses the varietal's classic balance through black cherry and hazelnut notes, finishing with caramel sweetness. The washed processing method typically preserves bright acidity and clean flavor clarity, allowing the bean's inherent characteristics to emerge distinctly. At 1800 meters above sea level in Guatemala's El Progreso, these elevation conditions support the development of the measured fruit and nut complexity found here.
