Rachia is a fruit-forward natural from Ethiopia’s famed Yirgacheffe, produced by more than 350 smallholder farmers across the Idido district. Ripe cherries are delivered to the Gizat Washing Station, where meticulous sorting ensures only the best fruit makes the cut. Whole cherries are then laid out on African raised beds for a slow, steady dry over 15–20 days. Careful airflow, temperature control and regular turning allow sugars to develop evenly while preserving clarity and balance. After drying, the coffee rests locally before undergoing further sorting and milling, ready for export. In the cup, Rachia is bright, complex and full of character, with lively notes of lime pie, apricot sweetness and a warm gingernut finish.
