COLOMBIA La Palma – Filter
Roasted by Five Elephant
Structured Pink Bourbon from high-altitude Colombian farm with careful fermentation and slow drying.

From the roaster
This lot comes from Selmira Ruiz’s one hectare farm La Palma in La Perdiz, San Agustín, at 1740 meters above sea level. The site sits on clay dominant soils with volcanic influence, where steady rainfall and elevation support gradual cherry maturation and increased seed density.
Pink Bourbon performs particularly well in southern Huila, producing elongated seeds and pronounced aromatic lift when harvested carefully. At La Palma, cherries are selectively picked at peak ripeness, fermented for approximately 48 hours in a controlled washed process, and dried slowly over 15 days to ensure stable moisture reduction.
The result is a structured, high clarity Pink Bourbon shaped by altitude, soil composition, and disciplined post harvest management rather than heavy fermentation.

Context
Five Elephant sources this washed Pink Bourbon from producer Selmira Ruiz in San Agustín, Huila, grown at 1740 meters. Pink Bourbon represents a fascinating branch of the classic Bourbon family, historically prized for distinctive aromatic complexity. The washed processing method employed here emphasizes clarity and brightness by removing the fruit during fermentation, allowing the varietal's inherent character to shine through. This combination of terroir, varietal selection, and meticulous wet-milling creates a foundation for the refined, nuanced cup Five Elephant has roasted specifically for filter preparation—a format designed to highlight the coffee's subtle structural elements and clean finish.
