This edition of our Women in Coffee series comes from Carmenza Paya, mother of Eider Socorreño, the producer behind our popular Nasa We'sx coffee from our Indigenous Coffee series. This coffee hails from their family farm, Mirasol, in the Nasa Indigenous Reserve in central Colombia. For the past 25 years, Carmenza has led her family toward producing high-quality specialty coffees with minimal environmental impact. Six years ago, she helped her family obtain organic certification for the farm, setting a high standard for others in her community.
Mirasol is a balanced coffee, with sweet, rich notes of chocolate, a citric orange-like acidity, and subtle notes of baking spices to round out the cup.

Context
Sourced from producer Carmenza Paya in Tolima, Colombia, this washed coffee arrives at Devoción from 1700 meters elevation. Roasted to emphasize chocolate and warming spice notes alongside bright orange acidity, MIRASOL exemplifies the profile potential of Colombia's high-altitude coffee regions. The lot's designation underscores the critical role women play throughout coffee production—from farm management through harvesting and processing—though often underrecognized in specialty coffee narratives. The interplay of chocolate richness with citrus and baking spice suggests the balance typical of well-executed washed processing, where fermentation control and careful drying preserve both sweetness and complexity. Explore the flavor dimensions further with the sensory wheel.
