Context
This Pink Bourbon from producer Maricela Penagos represents the washed coffees of Huila, Colombia, a region known for balanced, bright profiles. Washed processing typically emphasizes cleaner acidity and defined fruit character—qualities evident here through the roaster's notes of plum and lime zest, complemented by a green tea undertone. Da Matteo's roasting brings forward the varietal's inherent clarity, allowing the higher-elevation origin to express itself without heavy development. Pink Bourbon, a natural mutation within the Bourbon family, can showcase floral and fruit-forward tendencies depending on terroir and handling, and this lot appears to lean into those brighter dimensions.
