From the roaster
Our latest Guest Coffee once again comes all the way from Colombia, this time from Aponte, Nariño. Colombia is an origin we and many other roasters find ourselves coming back to constantly due to the incredible quality produced there. The farm has had great success with the honey process due to the low volume of coffee they produce via this method, the weather conditions are also perfect with relative humidity and temperature being very low throughout the whole year. This allows the coffee to dry slowly, resulting in a complex and delicate cup profile.
Within the past 2 decades this region of Colombia was forced to grow illicit plants by the guerrillas making the area extremely dangerous and almost impossible to access. They thankfully managed to join forces to put a stop to this and are now growing traditional vegetables and coffee instead; today producing some incredible coffees like this one, in the cup expect Peach, Fudge and Orange.

Context
This honey-processed coffee from the Nariño region of Colombia represents a style that balances fruit-forward brightness with deeper sweetness. Honey processing—detailed in 200 Degrees Coffee's methodology—allows the coffee cherry's natural sugars to influence the bean's final flavor profile, often creating complex interactions between fruit and caramel-like notes. The producer Aponte crafts this lot to showcase Nariño's distinctive terroir, with the roaster identifying peach and orange as the coffee's fruit character, complemented by fudge sweetness. 200 Degrees Coffee has brought out these layered flavors through their roasting approach. For those exploring how these descriptors fit within coffee's broader sensory landscape, the flavor wheel offers a helpful reference point.
