From the roaster

Chocoloco is our partner, Cata’s, celebration of the richer, sweeter side of Colombian coffee. Built from carefully selected lots sourced from smallholder producers, this coffee showcases the depth and complexity that can emerge when exceptional raw material meets thoughtful processing. It is a project designed not only to highlight flavour, but also to create greater opportunities for producers who may not otherwise have access to specialty markets.

In the cup, Chocoloco lives up to its name. Layers of dark chocolate and cocoa are complemented by ripe fruit notes, creating a profile that is indulgent without losing clarity. Expect a syrupy sweetness, hints of red berries and grape, and a wine-like complexity that adds intrigue from first sip to finish. The result is a coffee that feels comforting and familiar while still offering the vibrancy and character that modern Colombian coffees are known for.

Careful fermentation and drying help build both sweetness and structure, producing a coffee that performs beautifully across brewing methods. Whether brewed as espresso or filter, Chocoloco delivers a plush body, balanced acidity, and a lingering finish that keeps drawing you back for another cup. It is a coffee for those who love chocolate-forward profiles but still want a sense of origin and complexity in the cup.

Context

St. Ali's Chocoloco Natural showcases the producer Cata's Colombian lot in its natural-processed form. Natural processing—where beans ferment inside the fruit before drying—tends to emphasize heavier, fruit-forward profiles. Here, that translates to dark chocolate and cocoa notes grounded by ripe fruit complexity: red berries, grape, and wine-like qualities that suggest extended fermentation development. The interplay between cocoa richness and bright berry acidity creates a full-bodied cup with notable depth. This expression exemplifies how natural processing can unlock layered fruit characteristics in Colombian coffees, where the bean's inherent sweetness amplifies through skin contact during drying.
