From the roaster

When Virgilio and Salomé Guzman planted this farm in 1960, they chose Bourbon and Typica trees that still produce alongside young Pacas today. That rare mix of old and new growth gives this coffee its singular character, delicate and refined, with notes of nectarine, dates, and vanilla bean. Eleven years on our menu, and it keeps earning its place.

Sightglass Coffee

Context

This Honduras lot from producer Salomé Guzman showcases the classic sweetness characteristic of Bourbon varietal coffees. Roasted by Sightglass Coffee, it presents a fruit-forward profile with nectarine and dates complemented by vanilla bean notes—a combination that speaks to the balanced complexity natural-processed coffees often develop. The interplay of stone fruit and subtle vanilla sweetness offers approachable clarity while maintaining the fuller body typical of this preparation style. This represents a straightforward expression of Central American terroir filtered through both varietal character and roasting craft.
