From the roaster

Don't call it a dark roast! Okay, okay...we won't.

How about we call it Civitas and say it's "a slightly darker roast with slightly longer development"? Yea, that sounds cool!

In either case, we're excited about this one! Huck has long believed that we should (or could) be just as proud of our darker & more developed coffees, as we are of our lighter offerings.

It just took us a while to find a roast profile that still checked all the boxes for us!

Civitas is meant for the fan of a full bodied coffee with notes of dark sugars, chocolate, toffee, and a great nuttiness -- not unlike our Blue Orchid Blend, but a hair darker than that.

Civitas is currently a blend from the Café Solidario Cooperative in Northern Peru.

Some or all of the coffee in this blend was subject to a tariff upon import. The higher pricing on this product reflects added tariff costs for both the unroasted coffee and our packaging, while striving to maintain profit margins for wholesale partners who match our retail prices, in their businesses.

Huckleberry Roasters

Context

This Peru-origin coffee comes from Huckleberry Roasters, sourced from Café Solidario Cooperative in Northern Peru's growing regions. The roaster emphasizes a flavor profile centered on dark sugars, chocolate, toffee, and nuttiness—a combination that suggests a fuller-bodied cup with caramelized sweetness and warming spice notes. Coffees from Peru often exhibit these kinds of deeper, cocoa-forward characteristics, particularly when roasted to bring out their natural weight.

For a detailed breakdown of how these flavor elements compare across the broader spectrum of coffee tasting, explore the flavor wheel. This lot represents Café Solidario Cooperative's work in one of Peru's northern coffee-growing zones, where altitude and climate conditions support the development of these balanced, approachable profiles.
