BRAZIL Fazenda Ambiental Fortaleza – Filter
Roasted by Five Elephant
Organic natural process microlot from Brazil grown at 900–1000 meters, refined through selective breeding.

From the roaster
This microlot comes from Fazenda Ambiental Fortaleza in Mogiana, São Paulo, led by Felipe Croce. Grown at 900–1000 meters in the community of Agua Limpa, this coffee represents a long-term project developed exclusively with Five Elephant.
Over multiple harvests, Felipe has selected and replanted the best-performing seedlings, working toward genetic stability through repeated cupping and field selection. The result is an exotic varietal refined over generations, not through experimentation alone, but through consistency and observation in the field.
Produced under certified organic and regenerative systems, this natural process microlot reflects FAF’s integrated approach to biodiversity, soil health, and on-farm biological inputs. It is a focused expression of varietal development, patience, and collaboration, and one of the most precise coffees to come from this partnership.

Context
Brazil's Mogiana region in São Paulo has long been a cornerstone of the country's coffee production, and natural processing remains a defining method for many lots from this area. Natural-processed coffees tend to emphasize fruit-forward character and body, qualities that emerge from the extended contact between bean and fruit during drying. This Five Elephant offering from Fazenda Ambiental Fortaleza comes from moderate elevation—900–1000 masl—typical of the Mogiana zone, where conditions favor the development of balanced, approachable profiles. The natural process here allows the inherent sweetness and character of the Brazil terroir to express itself fully, making this a thoughtful choice for exploring how regional identity and processing method work in concert.
