From the roaster

Our latest Fuego is an experiment we conducted at Finca San Jeronimo Miramar in Guatemala, working with Cashmere hops in the fermentation tank to influence the profile of the brewed-up cup of coffee!

 We rehydrated dried hop pellets that we sourced from our friends at Half Acre, bringing them back to life and making them easier to evenly layer in with the freshly pulped Catuai, which spent days in contact with these porous beans, imparting their floral, tropical notes in the beans while they are easier to manipulate. Cashmere hops are known to have a citrus, stone fruit, and herbal notes when used in beer brewing, with this being one of the hops used in Half Acre's Bodem.
