From the roaster

Jairo Arcila is a third-generation coffee grower, based in the Quindio department of Colombia. Jairo purchased his first farm in 1987 and now owns and runs six farms in total. This lot comes from Santa Monica, which sits at 1500masl in Armenia. Jairo received great advice from his sons, Carlos and Felipe, who are the owners and founders of Cofinet. They helped him move into specialty coffee and experiment with more advanced processing techniques.

Cartwheel Coffee

Context

This lot from Cartwheel Coffee showcases the work of producer Jairo Arcila in Colombia's Quindío region. Grown at 1500 meters, coffees from this elevation in Colombia's coffee axis typically balance sweetness with bright acidity, though the specific character of this lot will emerge in the cup. Arcila's direct relationship with the roaster suggests attention to both cultivation and careful sourcing—a dynamic increasingly common among specialty producers and roasters seeking transparency in the supply chain.

Natural-processed coffees tend toward heavier fruit expression, and this lot's handling method may contribute distinctive body and aromatic complexity. For a detailed exploration of how these flavor characteristics appear, consult the flavor wheel to contextualize your tasting experience.
