They also produce their own compost to use as fertilizer on the farm. Their long-term goal is to establish demonstration plots and innovate by introducing new varieties.

Context
Axil Coffee Roasters' Peru — La Coipa showcases the Geisha varietal—prized for its distinctly floral and tea-like character—grown in Cajamarca's La Coipa region by producer Nevado Palacios Carrasco. This washed coffee originates from moderate elevation at 1960 masl, where the region's conditions support the delicate complexity the Geisha variety is known for. The roaster identifies orange jam, jasmine, and caramel in the cup, suggesting both bright citrus acidity and subtle floral notes characteristic of the varietal. Washed processing typically preserves the bean's inherent clarity and brightness, allowing the Geisha's nuanced profile to emerge distinctly. This lot represents Peru's commitment to specialty coffee craftsmanship through selective varietal cultivation and careful processing.
