About The Coffee: Finca Las Cascadas is nestled in the mountains of La Palma, Chalatenango, near El Salvador’s northern border. Sitting at an average altitude of around 1,550 meters above sea level, the farm benefits from cool temperatures and a cloud-forest microclimate that supports slow cherry development and exceptional cup quality. Its name, meaning “The Waterfalls,” comes from the natural cascades that run through the estate, shaping both its landscape and growing conditions.

The farm produces Pacamara, El Salvador’s signature variety, known for its unusually large beans and expressive cup profile. Coffees from Las Cascadas are celebrated for their complex acidity, creamy body, and notes of tropical fruit, sweet honey, and soft florals. Through carefully managed micro-lots and a focus on Honey and Natural processing, the team enhances sweetness and clarity, allowing the full character of the coffee to shine.

Context

Las Cascadas, sourced from Axil Coffee Roasters in El Salvador's La Palma region, showcases the distinctive character of the Pacamara varietal. The honey process employed here typically develops sweetness and body while allowing the bean's inherent flavors to emerge—in this case, poached pear, caramel, and milk chocolate notes that suggest both fruit-forward clarity and rounded sweetness. Pacamara, a hybrid known for its larger bean size and distinctive flavor profile, shines in honey-processed lots where fermentation enhances its natural complexity.
