About The Coffee: Nevado Palacios Carrasco has owned Finca El Cedro since 2011. He and his family are deeply passionate about coffee and care for the environment through forest conservation.
Coffee from the farm is selectively harvested, depulped, washed, and dried. They put technical work into the farm's planting, fertilization, pruning, and harvesting. They also produce their own compost to use as fertilizer on the farm. Their long-term goal is to establish demonstration plots and innovate by introducing new varieties.

Context
La Coipa, sourced from Nevado Palacios Carrasco in Peru's Cajamarca region, showcases Geisha—a varietal prized for its distinctive floral and tea-like clarity. This washed-process lot arrives at 1960 masl, where mountain elevation typically supports the development of complex aromatics. Axil Coffee Roasters has brought forward orange jam brightness alongside jasmine florality and caramel sweetness, suggesting a coffee that balances fruit-forward character with delicate floral notes. The combination speaks to both the varietal's inherent complexity and the careful cultivation at altitude in this Peruvian origin.
