About The Coffee:Arturo Arango is a young coffee farmer who has been producing coffees since 2015. He bought El Paraiso a 25 hectares farm located at 1300 m.a.s.l. in Barcelona, Quindío.

When he bought the farm, most of the coffee trees were more than 25 years old so he started to renew every tree and planted Costa Rica and Java varieties.

The first few years on his farm were spent renewing the trees and improving the practices. After three years, the new trees started bearing fruit and the results were excellent, encouraging Arturo to continue along his path of revitalizing the farm.

Recommended Recipe: Slowly pour 150ml of hot water (92-96°C) over 3 minutes.

Context

This natural-processed Castillo from producer Arturo Arango in Colombia's El Paraiso region exemplifies how the natural process can amplify fruit-forward characteristics in the cup. Axil Coffee Roasters has brought out blackberry jam and rhubarb notes alongside dark chocolate—a combination that suggests both the inherent sweetness of naturally fermented lots and the deeper tones developed through roasting. Castillo, a hybrid varietal bred for disease resistance and productivity, continues to gain recognition in specialty coffee circles, and this lot demonstrates its capacity for complex, layered flavor expression when handled with care from farm to roastery.
