Variety Coffee Roasters was founded in 2008 with the opening of its first café on Graham Avenue in Williamsburg, Brooklyn. The company has grown steadily over the years, adding locations in Greenpoint, Bushwick, Chelsea, and the Upper East Side. In 2014, Variety began roasting its own coffee in-house at its Bushwick café, and by 2019 had expanded roasting operations to a dedicated standalone roastery in East Williamsburg. The roaster's guiding philosophy centers on freshness: its menu is built to reflect the varying harvest seasons of different coffee-growing regions, with an emphasis on showcasing only the most recently sourced lots. Variety roasts coffee every day in Brooklyn and continues to open new café locations throughout New York City. The company also offers wholesale services and a range of equipment and brewing supplies through its online shop.
