Sparrow Coffee operates a roastery in Chicago and cafes in Naperville and Clarendon Hills, Illinois, with a mission centered on sustainable, environmentally responsible coffee roasting. The company sources certified organic and 'organic by default' coffees and uses a modified roaster engineered to produce very little to no smoke, eliminating the need for afterburners that would otherwise consume significant quantities of natural gas and generate greenhouse gas emissions. Their proprietary roasting technique combines anaerobic roasting at critical points with traditional fire-roasting at other increments, a method intended to influence acidity, sweetness, flavor, mouthfeel, and aromatics in ways not achievable through conventional approaches. Head roaster Chris Chacko brings over three decades of experience and more than 100,000 roasts to the craft, approaching each roast as an artistic interpretation that seeks to highlight hyper terroir-driven coffee flavors through careful manipulation of air, temperature, and time.
