Quills Coffee is a Louisville, Kentucky-based specialty coffee roaster and café group founded in 2007, committed to small-batch roasting, producer relationships, and community-centered hospitality.

Quills Coffee was founded in 2007 when its founder, a former social worker, opened the first café in Louisville's Germantown neighborhood. The original shop established the company's foundational philosophy: that exceptional coffee, combined with genuine southern hospitality and a focus on human connection, can transform a café into a meaningful community space. After relocating to the Highlands neighborhood on Baxter Avenue, Quills continued to grow and eventually brought roasting in-house, producing small-batch coffee in Louisville to maintain greater control over quality and the overall customer experience. Today the company operates six cafés in Louisville and one in downtown Indianapolis. Quills sources its coffee through close partnerships with producers and sourcing partners worldwide, emphasizing traceability and shared commitment to quality. The roaster's operational philosophy is built around three core values—Genuine Care, Continuous Craft, and Creative Education—which guide everything from barista interactions to roastery curation and café management.
