Founded in 2011, Café Saint-Henri identifies itself as the first specialty coffee micro-roaster to establish itself in Quebec, crediting itself with introducing specialty coffee culture to the region. For over 12 years, the roastery has purchased microlots of high-quality coffee directly from producer partners, with more than 80% of purchases made directly at the source. The roaster emphasizes genuine long-term partnerships with farmers, offering a premium price equivalent to at least twice the standard fair-trade wage to support community growth. In cases where traceability is limited by regulation, Café Saint-Henri works with private importers and trusted cooperatives that practice pesticide-free agriculture and redistribute profits equitably to their members. On the roasting side, the team takes a precision-driven approach, controlling variables such as green bean moisture, environmental temperature and pressure, real-time roast curve monitoring, and post-roast weight loss ratios, alongside cupping evaluations. Coffees are packaged in Grain Pro or vacuum-sealed bags at origin, then finished in one-way valve packaging to preserve freshness. The roaster also offers brewing guides, training, subscriptions, and commercial services.
