Our roasting process brings out the natural sweetness, highlighting flavors such as honeycomb, vanilla, and chocolate, while maintaining a smooth and balanced profile.

Ristretto is a concentrated espresso style served at a 1:1 to 1:1.6 ratio, resulting in a richer and more intense flavor profile. By brewing under pressure, typically at 9 bars, the extraction process intensifies the coffee's richness and sweetness. This pressure is equivalent to 9 times the atmospheric pressure at sea level, creating a concentrated, syrupy espresso with a harmonious balance of flavors.

Civil Coffee's 2 Kilo La Union combines select lots from Chiapas and Oaxaca into a hybrid-process espresso that blends the best of two worlds. The 70/30 split between natural and washed processing creates complexity—natural-processed coffees tend toward heavier fruit and body, while washed lots emphasize clarity—resulting in the roaster's tasting profile of honeycomb sweetness, vanilla, chocolate, green apple, and orange blossom. The blend draws from traditional Bourbon, Typica, Mundo Novo, and Caturra varietals grown across 1200–1800 meters of elevation in Mexico's premier coffee regions. This espresso-focused lot suits both milk-based drinks and straight pulls, with enough sweetness and body for consistent performance through the group head.
