Mexico — SIPRO

This lot is naturally processed, where the coffee is dried whole in the cherry after harvest. With the fruit left intact, sugars are absorbed back into the seed as it dries, building depth and intensity of flavour.

The result is a cup full of fruit-forward sweetness, with notes of dried fruit and a dense, syrupy texture. This is the fourth year in a row we’ve shared this coffee with you and once again, it’s a real standout.

Assembly Coffee

Context

This natural-process Mexico offering from SIPRO, roasted by Assembly Coffee, showcases the fruit-forward character typical of natural processing. The producer's careful handling yields dried fruit notes and pronounced sweetness—hallmarks of coffees where the cherry remains intact during drying, allowing sugars to concentrate and develop complex flavor compounds. Natural processing tends to emphasize the bean's inherent fruit qualities, and this lot demonstrates that potential through its tasting profile. For those exploring how processing methods shape flavor, this Mexico represents an accessible entry point into the bolder, fruit-centric expressions that distinguish natural-processed coffees from their washed counterparts.
