The West Valley (Valle Occidental), around towns like Naranjo, Sarchí, and Palmares northwest of San José, is one of Costa Rica's most innovative regions and the original home of the Villa Sarchi variety — a compact Bourbon mutation discovered there in the 20th century. Micro-mills across the valley have made it a laboratory for honey and natural processing, producing coffees with floral aromatics, stone fruit, honey sweetness, and lively acidity at elevations from roughly 1,000 to 1,700 metres. Its combination of a named local variety, micro-mill culture, and processing creativity makes the West Valley a key part of Costa Rica's specialty identity.
